In this 5-part series Chef Jessica will share the techniques you’ll need to master the Five Mother Sauces every cook should know. They are referred to as “Mother Sauces” because each is the root of its own unique family of sauces. Comprised of a few simple ingredients you will learn that these basic building blocks serve as the starting point for a slew of so many other culinary classics. The topic may seem intimidating but be assured…“it’s all gravy“.… this series will nurture your kitchen confidence.

Week 3 – Tuesday, July 25th Chef will start with a roux however this week the base will be mixed with beef stock for Espagnole Sauce – the starting point for a rich and deeply flavorful concentrate called Demi-Glace. Wine is added to yield the intensely flavored Madiera Sauce and will be served over sliced roast beef with roasted potatoes.

Week 4 – Tuesday, August 1st we will prepare Hollandaise Sauce where Chef Jessica will showcase the technique of emulsification to create this velvet masterpiece to compliment our main course. Poached Fish Bearnaise will be served over rice with roasted asparagus and a fresh salad. As the finale, we will have Sorbet for dessert. *Menu is Gluten-Free.

Week 5 – Tuesday, August 8th you’ll learn about daughter sauces as we explore variations of basic “Italian roux” – Tomato Sauce – Chef will share her recipes for Tomato concassé and Portuguese sauce served over pasta with a fresh garden salad and dessert……

Having just completed the series on the essential Five Mother Sauces – it’s time to highlight another valuable culinary skill every chef needs to know. Anyone who spends time in the kitchen will benefit from this demonstration class where you can learn to master one of the most important tools in your kitchen – Your Knife!

Chef Jessica will share basic knife techniques and you will learn to slice, dice and properly handle a knife. She will talk about the basic cutlery you’ll want in your kitchen to assure success; as well as the proper methods for cleaning, storing and sharpening your tools. Sit back and enjoy or bring your favorite knife and help while we work through a garden of assorted local vegetables to yield a fresh Salsa Appetizer and a delicious classic curried soup – Mulligatawny. *Vegetarian and Gluten-Free options are available.
